Ice Leads to Treasure

Since living in the country, I have learned to be over prepared for any emergency. This past week we have had a rough introduction to Mr. Winter 2013. He has subjected us to a horrible ice storm, forcing us in our homes for four days. Luckily, I have learned to stock up and have enough food to last us a month. 

Chris decided to put stew on to cook in the crockpot, and what goes better with stew than cornbread?  Except this was the one thing I didn't have. 

Here's a little history lesson. I grew up eating Jiffy cornbread. It's probably the easiest thing you can fix from a box, but that's all I knew, and I loved it!

I looked through everything I had and realized that I had ingredients for what I thought could make cornbread but knew nothing about making it, so I turned to the internet, Pinterest to be exact, even though it had proven to let me down on several occasions. This time, however, I found a treasure. This is one of the best recipes for cornbread that I've ever tried. Keep in mind, since Jiffy is a sweet cornbread, that is the only kind I eat, but since you can make this from scratch, as always, you control the ingredients. You can add as much or as little sugar as you want. I wish I could take credit for this recipe but I cannot. I found it on a site called Blogging While Nursing and you can find it here

SWEET CORNBREAD 

Ingredients

1        cup all-purpose flour
1        cup yellow cornmeal
2/3     cup sugar
1        Teaspoons salt
3 1/2  teaspoons baking powder
1        egg
1        cup milk
1/3     cup vegetable oil

Directions

1. Heat oven to 400 degrees F. 
2. Spray a 9 inch round cake pan. 
3. Combine flour, cornmeal, sugar, salt, and baking powder into a bowl. 
4. Stir egg, milk, and oil into the dry ingredients until well blended. 
5. Bake for 20-25 minutes or until a knife can be inserted into the middle and come out clean. 
6. Eat and enjoy.

Diaper Debacle

WARNING:  Do NOT read if you are squeamish!

If you know me well, then you know that I have no problem talking about everything under the sun with just about anyone, including bodily functions.  No, not all posts will be disgusting, but since this was my intro into parenthood, then I felt it most appropriate for me to share for my first post.  (Plus, this is my blog and I can do what I want to).

About a month and a half a go, this would make K about two months old, we ran into town with Chris. While Chris went Lowes, I stayed in the car to finish feeding her. Upon finishing, I smelled the all too familiar smell of #2. I decided that it would be a good time to change her since he would probably be awhile in the store.  I took her out and laid her on the back seat of Chris' truck, deciding not to use the changing pad because the seat was slanted and I knew it would cause her to slid back more. I began by getting all the necessary items out. I took the old diaper off and placed it in the trash bag with one hand while holding her legs and bottom up with the other hand, obviously, because I still needed to wipe the mess off her.  As I'm wiping, here comes the second round of #2, so I just catch it with the wipe in my hand.  I go to throw that into the trash, turn my eyes to her, and here comes round three.  I quickly grab for an unopened diaper to slid under her and wait till she is finished.  I then throw that diaper away, look, and round four begins, so I grab for a swaddling blanket to catch it because I quickly noticed that I was VERY low on wipes and didn't want to use them up.  Since that blanket was beyond saving, I threw it in the trash, and began the clean up process again.  K, on the other hand, had different plans because here comes round five.  Yes FIVE! It was like a broken soft serve machine!  (Mind you that I have been doing everything one handed because I have been holding her bottom up the whole time so as not go get anything on the seat because I know Chris will flip).  Since I had a wipe in my hand, I just caught it again with that.  All I can do at this point is laugh because I can just imagine what this must look like.  When she finished, I see that I have only one little wipe left. I do what I can with it and have to wrap her back up half dirty. I put her back together and see that I have gotten the "mess" on not only her but her onesie, on me, AND on Chris' seat!!  I figure that he can't really be mad at his little girl for needing changing, so I buckle her back in, find a spare napkin and hand sanitizer to clean myself, hope in the front seat, and pretend nothing happened.  When he gets back in the truck, he gives me a horrible face. I tell him what happened and of course wasn't mad but shocked that that came from her!  Needless to say, she went straight to the bath when we got home. 

Lesson: Keep extra wipes in the car!
